Crispy Ham and Pear Salad

I was halfway through eating this side salad when I thought I had better snap a photo as it was delicious!!  Though the photo doesn't quite show this...


...you'll just have to trust me on this.

The recipe called for 1 small cos lettuce and 1 50g bag of watercress or rocket, and since I had trouble collecting those items on my recent grocery shop, I opted for a simple bag of mixed Italian lettuce leaves.  I also choose to use balsamic vinegar over lemon juice.  Because I like balsamic vinegar.  ;)  I served mine alongside BBQ steaks.

Ingredients
1 small cos lettuce
50g bag watercress or rocket
2 ripe avocados, peeled, stoned and sliced
handful of herbs, such as dill or chives
90g pack prosciutto (I had about 6 slices)
4 tbs olive oil
2 ripe pears, cored and sliced
2 tsp wholegrain mustard
juice of 1/2 lemon

Method
1. Tear the lettuce into bite-sized pieces, then arrange with the watercress or rocket, avocados and herbs on four large serving plates.  Heat a large frying pan and fry the prosciutto until crisp.  Lift out and set aside.

2. heat the olive oil in the same pan.  Add the pears, mustard and lemon juice and heat through briefly.

3.  Return the prosciutto to the pan, season, then immediately spoon everything over the salad.  Serve at once.

Balsamic Lamb Chops with Pea Puree

(Not the best photos to do the meal justice!)

Once I would have screwed up my nose at 'mushy peas', or 'puree peas' but after many trips to the UK and it now becoming very trendy in restaurants across the world,  I spotted this recipe and thought I'd give them a go myself.  Ooo they were yummy and will be making them again.


Taken from GoodFood's "101 Quick Fix Dishes", pg 96, published 2007


Ingredients
6 lamb chops
3 tbs balsamic vinegar
5 tbs extra-virgin olive oil
Mint leaves, small bunch, chopped
300g frozen peas
2 tbs Parmesan, grated

Method
Marinate the chops in 2 tablespoons balsamic vinegar, 2 tablespoons oil, half the mint and some seasoning. Meanwhile, cook the peas in boiling water for 2 minutes.  Drain, then tip into a food processor and puree with the remaining mint, vinegar, olive oil, Parmesan and some salt. Pour into a saucepan to reheat.  Grill the chops for 2-3 minutes (I used a griddle pan), each side, then rest for 5 minutes in foil.  Serve with the pea puree.

Serves 2.

Bacon and Camembert Salad

I'm always looking to make side salads rather than the regular potato salad or coleslaw.  And since it is now summer here in the Middle East, our BBQ is beginning to get more of a work out than usual.  (Until the temp hits 50 degrees in the late afternoon anyway!)  This side salad was really tasty and very simple. I think it may come a regular menu item in our household.   I served this with lovely Rib Eye Steaks.

In terms of camembert, choose a soft, ripe one and let it rest at room temperature before using.

Ingredients
8 rashes smoked streaky bacon
125g pack camembert
2 thick slices bread, crust removed
7 tbs olive oil
140g crisp green salad
2 tbs white wine vinegar
1 tbs wholegrain mustard
1 garlic clove, finely chopped

Method
1. Preheat the grill and cook the bacon for 5-8 minutes until crisp, turning halfway through.  Set aside to cool.  Cut the camembert into bite-sized wedges

2. Grate the bread into course crumbs.  Heat two tablespoons of the oil in a frying pan and cook the crumbs, stirring, until crisp and golden.  Season and set aside.

3.  Tip the salad into a bowl.  Break the bacon into bite-sized pieces and mix into the salad with the cheese.  Mix together the vinegar, mustard, garlic and remaining olive oil.  Pour over the salad and toss well.  Sprinkle with the crisp crumbs and serve.

Jamie's Roast Meal

This week, my Jamie Oliver's 'Ministry of Food' cookbook is getting a good work out, I must admit.

Now I know how to cook a roast and vegetables - I know mostly everyone does. Bang the meat in, with the veggies at the same time if you must and cook away for an hour or two, use a bit of gravy powder with some settling juices and hot water and that's it. (Well, something like that.) Instead, I decided to actually follow a recipe for roasting beef and vegetables AND make (from scratch) my own gravy. And oh my, the result? Well, let me say that I'll be making my next roast this way again.

I do admit, that I make a pretty good roast meal without following a recipe - I learnt many, many years ago from a friend's mother, how to make crispy roast potatoes (par boil, drain, toss around in pan, roast in vegetable oil rather than olive) and my potatoes rarely let me down.  I've just never (*shock/horror*) made my own gravy from scratch so this was a great achievement for me.

So here are three separate recipes on making the 'perfect' roast meal and all taken from;
Jamie Oliver's 'Ministry of Food', published 2008

Perfect Roast Beef (pg 192)
Serves 4-6
1.5kg topside of beef (I used a NZ Rib-Eye 1kg beef)
2 medium onions
2 carrots
2 sticks of celery
1 bulb garlic
a small bunch of fresh thyme, rosemary, bay or sage, or a mixture (I used thyme, rosemary)
olive oil
sea salt and freshly ground pepper

To Prepare your beef
Take your beef out of the fridge 30 minutes before it goes in the oven.  Preheat your oven to 240C/475F/Gas 9.  There's no need to peel the vegetables - just give them a wash and roughly chop them.  Break the garlic bulb into cloves, leaving them unpeeled.  Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with olive oil.  Drizzle the beef with olive oil and season well with salt and pepper, rubbing it all over the meat.  Place the beef on top of the vegetables.

To Cook Your Beef
Place the tray in the preheated oven.  Turn down the heat immediately to 200C/400F/Gas 6 and cook for 1 hour for medium beef.  (If you prefer it medium-rare, take it out 5 to 10 minutes earlier, for well done, leave it in for another 10-15 minutes.)  If you're doing roast potatoes and veggies, this is the time to crack on with them - get them in the oven for the last 45 minutes of cooking.
Baste the beef halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them burning.  When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 minutes or so.  Cover it with a layer of tinfoil and a tea towel and put aside while you make your gravy.

To carve your beef
Remove the string from the meat.  Use a good, long, sharp knife to carve the meat and a fork (preferably a carving fork) to hold it steady.  Serve with prepared vegetables and hot gravy.

Roast Potatoes, Parsnips and Carrots (pg 202)
Serves 4-6
1.2kg potatoes
6 parsnips
6 carrots
1 bulb of garlic
3 sprigs of fresh rosemary
sea salt and freshly ground black pepper
olive oil

To Prepare your vegetables
Peel the vegetables and halve any larger ones length ways. Break the garlic bulb into cloves, leaving them unpeeled and bash them slightly with the palm of your hand. Pick the rosemary leaves from the woody stalks.

To cook your vegetables
Put the potatoes and carrots into a large pan - you may been to use two - of salted, boiling water on a high heat and bring back to the boil.  Allow to boil for 5 minutes, then add the parsnips and cook for another 4 minutes.  Drain in a colander and allow to steam dry.
Take out the carrots and parsnips and put to one side.  Fluff up the potatoes in the colander by shaking it around a little - it's important to 'chuff them up' like this if you want them to have all those lovely crispy bits when they're cooked.
Put a large roasting tray over a medium heat and either add a few generous lugs of olive or carefully spoon a little of the fat from the meat you're cooking.  Add the garlic and rosemary leaves.  Put the vegetables into the tray with a good pinch of salt and pepper and stir them a round to coat them in the flavours.  Spread them out evenly into one layer - this is important, as you want them to roast, not steam as they will if you have all on top of each other.  Put them into the preheated oven for about 1 hour, or until golden, crisp and lovely.  Serve immediately, with your roast dinner and your gravy.

A Consistently Good Gravy (pg 205)
Serves 4-6
As well as your roasted veg (listed in the beef recipe) you'll need:
1 heaped dessertspoon plain flour
a wineglass of red wine, white wine or cider, or a good splash of port or sherry (I used Rose')
1 litre vegetable, chicken or beef stock, preferably organic

To make your gravy
By the time you are here, your meat will be covered and resting and you'll have your tray of meat juices and vegetable trivet in front of you.

When everything is mixed and mashed up, add the alcohol to give a little fragrance before you add your stock (the alcohol will cook away).  Keep it over the heat and let it boil for a few minutes.  Pour the stock into the tray or add 1 litre of hot water.  Bring everything in the pan to the boil, scraping all the goodness from the bottom of the pan as you go.  Reduce the heat and simmer for 10 minutes, or until you've achieved the gravy consistency you're looking for.

To serve your gravy
Get yourself a large jug, bowl or pan and put a coarse sieve over it.  Pour your gravy through the sieve, using a ladle to really push all the goodness through.  Discard any veg or meat left behind.  At this point you've got a really cracking gravy and you can either serve it straight away on put back on the heat to simmer and thicken up.

Risoni Salad


A lovely, light tasting side salad. Try it for something a little different.

Ingredients
200g (1 cup) risoni
2 tsp extra virgin olive oil
2 tsp balsamic vinegar
1/2 tsp lemon zest
2 tsp lemon juice
40g baby rocket leaves
1 1/2 tbs shredded basil leaves
1/2 small red onion, finely sliced

Method
Bring a saucepan of salted water to the boil. Add the risoni and cook for about 12 minutes, or until tender. Drain, rinse under cold water, then drain again. Put the risoni in a large bowl with the oil, vinegar, lemon zest, lemon juice, rocket, basil and onion. Mix well, season to taste and refridgerate until ready to serve.

Serves 4 as a Side Salad

Coleslaw


Coleslaw is a pretty basic salad to make and there is probably got a zillion recipes out there to make it, but this one tasty. I don't always add the red cabbage (a bit pricey at times) and when I took this photo I didn't have the parsley added, nor the red cabbage. I have to say, the Food Processor gets a good work out in this recipe...

Ingredients
1/2 green cabbage
1/4 red cabbage
3 carrots, coarsley grated
6 radishes, coarsley grated
1 red capsicum (pepepr), chopped
4 spring onions, sliced
15g chopped flat-leaf (italian) parsley
250g (1 cup) whole-egg mayonnaise

Method
Remove the hard core from the cabbages and shred the leaves with a sharp knife. Place in a large bowl and add the grated carrot, radishes, red capsicum, spring onion and parsley.

Add the mayonnaise just before serving, season to taste and toss ntil well combined.

Serves 8-10 as a Side Salad

Moroccan Eggplant with Couscous


This salad made an excellent side dish for a BBQ we had and by all accounts, everyone enjoyed this flavoursome salad. Will definitely be making it again in the not too distant future...

Ingredients
185g (1 cup) instant couscous
200 ml olive oil
1 onion, halved and sliced
1 eggplant (aubergine)
3 tsp ground cumin
1 1/2 tsp garlic salt
1/4 tsp ground cinnamon
1 tsp paprika
1/4 tsp ground cloves
50g butter
2 1/2 large handfuls parsley, finely chopped
zest of 1 lemon
2 tbs capers, rinsed and drained

Method
Put the couscous in a large bowl and add 375ml (1 1/2 cups) boiling water. Leave for 10 minutes, then fluff up with a fork.

Heat 2 tbs of the oil in a large frying pan and gently cook the onion for 8-10 minutes, or until nicely browned. Remove with a slotted spoon, leaving the oil in the pan.

Cut the eggplant into 1cm thick slices, then into quarters and place in a large bowl. (I cut my eggplant into about 1cm cubes)
Mix the cumin, garlic salt, cinnamon, paprika and cloves in a small bowl with 1/2 tsp of salt, then sprinkle over the eggplant, tossing to coat well.

Heat the remaining oil in the frying pan over medium heat. Add the eggplant and cook, turning once, for 20-25 minutes, or until browned. Removed from the pan and allow to cool.

In the same pan, melt the butter, then add the couscous and gently cook for 2-3 minutes. Stir in the onion, eggplant, parsley, lemon zest and capers and take off the heat. Cool to room temperature before serving.

Serves 4 as a side salad.

Double Potato and Halloumi Bake

This is a very simple dish to make and would be delicious served with anything. To be honest with you, I could of just eaten a whole plate piled high of this. It was very yummy. And besides, I have a thing for roasted garlic...

You can replace the halloumi cheese with feta if you wish and I also added a carrot to the dish.

Ingredients
1 large sweet potato
1 large Desiree potato
1 red onion
1 yellow pepper
1 red pepper
1/2 head of garlic
4 tbs olive oil
black pepper
125g halloumi cheese, sliced as thinly as you can

Method
Preheat the oven to 200C/gas mark 6

Cut the sweet potato into rough 4cm cubes and the Desiree slightly smaller (2 1/2 cm) as the sweet potato will cook more quickly. Halve the red onion, then cut each into 4 to 6 segments, discarding any tough outer skin. De-seed the peppers and cut into 2 1/2 cm squares, and separate the cloves of garlic. Put everything into a large roasting tin and using your hands, give the vegetables a good coating of olive oil. Season with black pepper, but no salt as the cheese will make it salty. Cook for 45 minutes, by which time the vegetables should be cooked through and here and there tinged with brown. You'll need to turn the oven up to a maximum or light the grill for the endgame: so place the thinly sliced cheese on top of the bake, and put it back in the very hot oven or under the grill until the cheese has melted and turned slightly brown on top, about 5-10 minutes. Serve straight out of the roasting tin.

Chorizo, Rocket & Red Onion Salad

This salad was delicious!!! I should have made more!!

Ingredients
1/4 cup pine nuts
500g chorizo sausages, sliced
2 red onions, cut into thin wedges
1 tbs thyme leaves
100g baby rocket (I used baby rocket & baby spinach)
1 tbs balsamic vinegar

Method
Place pine nuts in a non-stick frying pan over medium heat. Cook, shaking pan, for 5 minutes or until light golden. Transfer to a large bowl and set aside. Cook chorizo, in two batches, for 2 to 3 minutes each side or until light golden. Transfer to a plate. Cover to keep warm.

Increase heat to medium-high. Add onion and thyme to pan. Cook, stirring occasionally, for 5 to 6 minutes or until onion begins to caramelise.

Add onion mixture, chorizo, rocket and vinegar to pine nuts. Season with salt and pepper. Toss until well combined. Spoon salad onto plates and serve.

Sauteed Potato and Chorizo

This is a very simple potato side dish to make. It is soooo tasty (trust me) and I will surely be making it again soon.

Ingredients
1/2 cup (125ml) extra virgin olive oil
200g hot chorizo sausage, chopped
4 cloves garlic, finely sliced
4 golden shallots, halved and sliced
1 tsp cayenne pepper
1 tsp sweet paprika
2 fresh bay leaves (I used dried)
800g small desiree potatoes, peeled and cut into 5mm thick slices
salt flakes and freshly ground pepper
1/2 cup (125ml) white wine
1 cup (250ml) water
4 sprigs oregano

Method
Heat a little of the oil in a large heavy-based frying pan over medium heat. Add chorizo, garlic, shallots, cayenne, paprika and bay leaves and stir for 1 minute. Add potato slices and remaining oil and stir. Season to taste and add wine. Bring to the boil, then add water and oregano sprigs. Lower heat and simmer for 15 minutes or until the liquid is almost evaporated and the potatoes are caramelised on the bottom of the pan. Adjust seasoning if necessary and serve.

Potato Salad with Crispy Bacon

I made this tonight and it was delicious and very, very tasty. I did not add any chives (for lack of them), nor did I have any flat parsley! (Next time, next time!!), but instead added dried dill in place. I highly recommend this recipe next time you plan on making a potato salad. Trust me. *wink wink* It will be a hit.

Ingredients
8 medium Desiree potatoes, cut into 1 cm thick slices (I used Golden Delight)
50 ml extra virgin olive oil
1 red onion, halved and sliced
1/2 cup (140g) mayonnaise
1/2 cup (120g) sour cream
salt flakes and freshly ground pepper
8 sprigs flat-leaf parsley, coarsely chopped
4 large eggs
1/2 bunch chives, finely chopped
6 sprigs tarragon, leaves picked and coarsely chopped (I used dried)
6 rashes bacon, fried until crisp, then broken into pieces

Method
Place the potatoes in a saucepan of lightly salted water over medium heat and boil for 15-18 minutes or until tender. Drain. Transfer to a large bowl and drizzle with the olive oil. Set aside to cool for 15 minutes, then add onion.

To make the dressing, mix mayonnaise and sour cream in a small bowl. Season well and stir through the parsley.

Boil eggs, covered, over medium heat for 6 minutes. Drain and refresh in cold water for 1 minute.

Add mayonnaise dressing, chives and tarragon to the potatoes and toss gently to combine, then top with the bacon. Slice off the pointy end of the soft-boiled eggs and scoop eggs out onto the salad. Finish with a grind of black pepper and scatter salt flakes over.

Serves 6-8

Sarah's Yummy Potatoes

This recipe was given to me from my sis-in-law, Sarah. I tried it last night and it was delicious! A cross between scalloped potatoes and a nachos topping...

Ingredients
4-5 potatoes, (depending on number of people), peeled and cubed
200g bacon pieces
200g shredded ham
1 onion, chopped
2 garlic cloves, crushed
300ml sour cream
tasty cheese - grated
mozzarella cheese - grated

Method
Boil the potatoes in a saucepan until soft. Fry together the bacon, ham, onion and garlic until the bacon is cooked and the onion is soft. Place the potatoes in a casserole dish and top with the bacon mixture. Spread the sour cream on top of bacon and then cover with cheeses. Place in 180C oven and cook for 20 minutes.

Delicious.

Layered Garden Salad

If we have anyone joining us for a BBQ dinner (like tonight), I always make this salad. It is always a hit as it is something a bit different. I thank Lyndon's mother, Marianne, for this recipe.

Ingredients
1/2 iceberg lettuce, shredded
2 cups frozen peas, thawed (I usually put them in the salad frozen - they don't take long to defrost)
2 hard-boiled eggs (I usually use 3)
250g button mushrooms, finely sliced (I always omit them because I'm not a mushy fan)
1 cup (125g) grated tasty cheddar cheese
1 cup mayonnaise
2 tbs sour cream
2 tsp Dijon mustard
1 tbs lemon juice
6 spring/green onions, finely chopped
4 bacon rashes, finally chopped
1 large tomato, sliced
2 tbs chopped fresh parsley

Place lettuce into deep 3.5 litre dish; cover lettuce evenly with peas. Push eggs through sieve into small bowl; stir in mushrooms then spoon over peas, top with cheese. Combine mayonnaise, cream, mustard, juice and onions in a small bowl and pour over cheese. Cover and refrigerate.

Cook bacon in a pan, stirring until crisp and browned; drain on absorbent paper. Arrange tomato slices over mayonnaise layer, sprinkle with bacon and parsley.
